Description

Easy High Protein Chicken and Veggie Soup is a hearty, cozy one-pot dish loaded with halal chicken, wholesome vegetables, and a creamy broth.


Ingredients

  • 1 tbsp olive oil
  • 1 lb halal chicken breast, diced
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup diced potatoes
  • ½ cup frozen peas
  • 4 cups chicken broth
  • 1 cup milk
  • ½ cup Greek yogurt
  • 2 tbsp flour
  • 1 tsp thyme
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • Chopped parsley (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and cook until lightly browned.
  2. Add onion and garlic and sauté 2–3 minutes until fragrant.
  3. Stir in carrots, celery, potatoes, thyme, garlic powder, salt, and pepper.
  4. Sprinkle flour over the vegetables and stir to coat.
  5. Slowly pour in chicken broth, stirring constantly to avoid lumps.
  6. Bring to a simmer and cook 15–18 minutes until vegetables are tender.
  7. Reduce heat and stir in milk and Greek yogurt until creamy and smooth.
  8. Add peas and cook 2–3 minutes.
  9. Taste and adjust seasoning. Serve warm.

Notes

  • For a thicker soup, simmer a few extra minutes or whisk in a slurry of 1–2 teaspoons cornstarch with water.
  • Substitute chicken thigh for more flavor or use leftover roasted chicken.
  • To make gluten-free, use gluten-free flour or cornstarch in step 4.
  • Low-sodium option: use low-sodium chicken broth and reduce added salt.
  • Leftovers keep refrigerated for 3–4 days or freeze for up to 3 months.
  • Stir in chopped parsley before serving if desired.
