Description

Easy Garlic Parmesan Chicken Pasta – Creamy, garlicky, and comforting without feeling heavy, this dish uses lean chicken, whole wheat pasta, and a Greek yogurt Parmesan sauce for a protein-packed weeknight dinner.


Ingredients

  • 8 oz whole wheat pasta
  • 1 lb boneless skinless chicken breast, sliced
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp Italian seasoning
  • ¾ cup plain Greek yogurt
  • ½ cup grated Parmesan cheese
  • ½ cup reserved pasta water
  • Optional: chopped parsley or spinach

Instructions

  1. Cook pasta according to package instructions. Reserve ½ cup pasta water, then drain.
  2. Heat olive oil in a skillet over medium heat. Add chicken, salt, pepper, and Italian seasoning. Cook until golden and fully cooked.
  3. Add garlic and sauté for 30 seconds until fragrant.
  4. Reduce heat to low. Stir in Greek yogurt, Parmesan cheese, and reserved pasta water until smooth and creamy.
  5. Add cooked pasta and toss until evenly coated.
  6. Remove from heat and garnish with parsley or spinach if desired. Serve warm.

Notes

  • For extra flavor, sear chicken until nicely golden before adding garlic.
  • To keep the sauce light, use non-fat Greek yogurt and adjust with additional pasta water as needed.
  • If sauce thickens too much, whisk in a bit more pasta water a tablespoon at a time.
