- 1½ lb boneless skinless chicken breast, cut into chunks
- 2 tbsp olive oil
- 2 large onions, thinly sliced
- 1 tsp garlic powder
- ½ tsp dried thyme
- Salt and black pepper, to taste
- 1 cup uncooked long-grain rice
- 2½ cups chicken broth
- ½ cup cooking cream
- 1½ cups shredded Gruyère or Swiss cheese
- Optional garnish: fresh parsley
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Heat olive oil in a skillet over medium heat. Add onions and cook slowly for 15–20 minutes until caramelized.
- Season chicken with garlic powder, thyme, salt, and pepper. Add to the skillet and cook for 3–4 minutes until lightly browned.
- Stir in uncooked rice, chicken broth, and cooking cream until well combined.
- Transfer mixture to the prepared baking dish and spread evenly.
- Cover tightly with foil and bake for 30 minutes.
- Remove foil, sprinkle cheese over the top, and bake uncovered for 10–15 minutes until cheese is melted and golden.
- Let rest for a few minutes before serving.
Notes
- You can swap Gruyère for Swiss or mozzarella if desired.
- Use low-sodium broth or salt to taste to control saltiness.
- Let the bake rest for 5–10 minutes before serving for easier slicing.
- Garnish with fresh parsley for color and freshness.
