Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 jar (24 oz) marinara sauce
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 810 broken lasagna noodles
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded mozzarella
  • 1/2 cup grated Parmesan
  • 1 cup ricotta cheese
  • Optional: fresh basil for topping

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until softened.
  2. Add ground beef or turkey and cook until browned, breaking it apart as it cooks.
  3. Stir in marinara sauce, diced tomatoes, broth, basil, oregano, paprika, salt, and pepper. Bring to a simmer.
  4. Add broken lasagna noodles and cook 12-15 minutes until tender.
  5. Pour in the heavy cream and stir until the soup becomes creamy.
  6. Add mozzarella and Parmesan; stir until melted and smooth.
  7. Ladle soup into bowls and top with a dollop of ricotta.
  8. Add fresh basil if desired and serve warm.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream and use part-skim mozzarella.
  • If gluten is an issue, use gluten-free lasagna noodles.
