- 1½ cups oat flour (gluten free if needed)
- ½ cup vanilla protein powder
- 1½ tsp baking powder
- 1 tsp cinnamon
- ¼ tsp salt
- 2 large eggs
- ¾ cup milk of choice
- ⅓ cup Greek yogurt
- ¼ cup honey or maple syrup
- 1 tsp vanilla extract
- Cinnamon swirl: 2 tbsp coconut sugar or brown sugar, 1½ tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C) and line a muffin pan with liners.
- In a bowl, whisk oat flour, protein powder, baking powder, cinnamon, and salt.
- In another bowl, whisk eggs, milk, Greek yogurt, honey, and vanilla.
- Combine wet and dry ingredients until just mixed.
- In a small bowl, mix cinnamon swirl ingredients.
- Fill muffin cups halfway with batter, sprinkle swirl mixture, then top with remaining batter.
- Use a toothpick to gently swirl.
- Bake for 18–22 minutes, until set and lightly golden.
- Cool completely before storing or freezing.
