- 24 square crackers (saltines or graham crackers)
- ½ cup unsalted butter
- ½ cup brown sugar
- 1 tsp vanilla extract
- 1 roll (16 oz) refrigerated sugar cookie dough
- ½ cup holiday sprinkles
- ½ cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment.
- Arrange the crackers in a single layer on the baking sheet.
- In a saucepan, melt butter and brown sugar over medium heat. Stir and bring to a boil for 2 minutes until thickened.
- Remove from heat and stir in vanilla. Pour evenly over the crackers.
- Crumble or flatten small pieces of cookie dough over the toffee-covered crackers.
- Sprinkle on chocolate chips if using.
- Bake 10–12 minutes until cookie dough is set and edges are golden.
- Immediately top with sprinkles.
- Cool completely, then chill 2 hours before breaking into pieces.
Notes
- Chilling for at least 2 hours helps the pieces set and makes them easier to break.
- You can omit the chocolate chips if you prefer.
- Graham crackers or saltines both work; adjust bake time slightly if using thicker crackers.
- Store in an airtight container at room temperature for up to 3–5 days, or freeze for longer storage.
