Easy Carrot Cake Oatmeal Cookies are soft, chewy cookies loaded with cozy spices and carrot cake flavor, naturally sweetened and made with wholesome ingredients.

- 1½ cups rolled oats
- ¾ cup finely grated carrots
- ½ cup unsweetened applesauce
- ¼ cup honey or pure maple syrup
- 1 large egg
- 2 tbsp melted coconut oil or olive oil
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp ginger
- ½ tsp baking powder
- Pinch of salt
- Optional add-ins: ¼ cup chopped walnuts or raisins
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk applesauce, honey, egg, melted oil, and vanilla.
- Stir in oats, baking powder, cinnamon, nutmeg, ginger, and salt.
- Fold in grated carrots and optional add-ins.
- Scoop dough onto the baking sheet and gently flatten each cookie.
- Bake for 12–15 minutes, until set and lightly golden.
- Cool on the pan for 5 minutes before transferring to a rack.
Notes
- Optional add-ins: ¼ cup chopped walnuts or raisins.
- Store cookies in an airtight container at room temperature for several days, or freeze for longer storage.
- Naturally sweetened with applesauce and honey/maple syrup; no refined sugar required.
