- 1 cup unsalted butter
- 1 cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- For the saltine toffee:
- 20 saltine crackers
- ½ cup unsalted butter
- ½ cup brown sugar
- ½ cup chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Brown the butter in a saucepan over medium heat, stirring until golden and nutty. Cool slightly.
- Whisk browned butter with brown sugar and granulated sugar until smooth.
- Add eggs and vanilla and mix until combined.
- Stir in flour, baking soda, and salt until dough forms.
- For the toffee, line a small pan with saltines. Boil butter and brown sugar 3 minutes, then pour over crackers. Bake 5 minutes and cool, then break into pieces.
- Fold toffee pieces into cookie dough.
- Scoop dough onto baking sheets and bake 10-12 minutes until edges are golden.
- Cool on the pan 5 minutes before transferring.
Notes
- These cookies are rich and chewy with a salty crunch from the saltine toffee.
- Best stored in an airtight container at room temperature for up to 5 days.
- For extra chocolate, fold in chocolate chips or sprinkle more on top before baking.
