Description

Easy Blueberry Biscuits with Buttermilk are soft fluffy biscuits bursting with blueberries and made without a mixer.


Ingredients

  • 1 tbsp baking powder
  • 1 tbsp sugar
  • ½ tsp salt
  • ½ cup cold butter, cubed
  • ¾ cup buttermilk
  • 1 cup fresh or frozen blueberries
  • Optional topping: melted butter or a light drizzle of honey

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk flour, baking powder, sugar, and salt.
  3. Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
  4. Gently stir in buttermilk until just combined.
  5. Carefully fold in blueberries.
  6. Turn dough onto a floured surface and gently pat into a 1 inch thick rectangle.
  7. Cut into biscuits and place on the baking sheet.
  8. Bake for 12–15 minutes, until tall and lightly golden.
  9. Brush with melted butter if desired and serve warm.
