  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • For the coating: 1/4 cup unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 10–12 cup bundt pan generously.
  2. In a saucepan, simmer apple cider over medium heat until reduced to 1 cup (about 15–20 minutes). Let cool.
  3. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
  4. In a large bowl, beat butter with both sugars until light and fluffy. Add eggs one at a time, then mix in sour cream and vanilla.
  5. Stir in half the dry ingredients, then the reduced cider, then the remaining dry ingredients until just combined.
  6. Pour batter into the prepared bundt pan and smooth the top.
  7. Bake for 45–50 minutes, or until a toothpick comes out clean. Let cool in pan for 15 minutes, then invert onto a wire rack.
  8. While still slightly warm, brush with melted butter and sprinkle the cinnamon-sugar coating all over.
  9. Let cool fully before slicing and serving.
