- 1 lb boneless skinless chicken breasts
- 1 can coconut milk
- 3 cups chicken broth
- 1 red bell pepper, sliced
- 1 cup mushrooms, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp soy sauce or coconut aminos
- 1 tsp curry powder
- ½ tsp turmeric
- Juice of 1 lime
- Salt and black pepper to taste
- Optional: chopped cilantro or green onions for garnish
Instructions
- Place chicken breasts in the bottom of the crockpot.
- Add bell pepper, mushrooms, onion, garlic, and ginger over the chicken.
- Pour in coconut milk and chicken broth.
- Stir in soy sauce, curry powder, turmeric, salt, and pepper.
- Cover and cook on low for 6 hours or high for 3–4 hours.
- Remove chicken, shred with forks, and return it to the soup.
- Stir in fresh lime juice and adjust seasoning to taste.
- Serve warm, garnished with cilantro or green onions if desired.
