Ingredients

  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can crushed tomatoes
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup small pasta
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • Optional: chopped fresh basil or parsley for garnish

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add onion, garlic, crushed tomatoes, chicken broth, Italian seasoning, basil, oregano, salt, and pepper.
  3. Cover and cook on low for 6 hours or high for 3–4 hours, until chicken is tender.
  4. Remove chicken, shred it, and return it to the crockpot.
  5. Stir in pasta, cover, and cook on high for 20–30 minutes until pasta is tender.
  6. Add mozzarella and parmesan cheese, stirring until melted and creamy.
  7. Let sit for 10 minutes before serving.
  8. Garnish with fresh herbs if desired.
