- 1½ lb boneless skinless chicken breasts
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can crushed tomatoes
- 4 cups chicken broth

- ½ tsp salt
- ½ tsp black pepper
- 1 cup small pasta
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese

Instructions
- Place chicken breasts in the crockpot.
- Add onion, garlic, crushed tomatoes, chicken broth, Italian seasoning, basil, oregano, salt, and pepper.
- Cover and cook on low for 6 hours or high for 3–4 hours, until chicken is tender.
- Remove chicken, shred it, and return it to the crockpot.
- Stir in pasta, cover, and cook on high for 20–30 minutes until pasta is tender.
- Add mozzarella and parmesan cheese, stirring until melted and creamy.
- Let sit for 10 minutes before serving.
- Garnish with fresh herbs if desired.

- You can use cooked chicken leftovers to speed up the recipe.
- For a thicker soup, simmer uncovered for a few minutes after adding cheese.
