- 2 lb boneless skinless chicken thighs or breasts
- ½ cup low-sodium soy sauce
- ½ cup brown sugar
- ½ cup apple juice
- 2 tbsp apple cider vinegar
- 1 tbsp sesame oil
- 4 cloves garlic, minced
- 1 tsp ground ginger
- ½ tsp smoked paprika
- 1 tsp vanilla extract
- ½ tsp black pepper
- 2 tbsp cornstarch
- 2 tbsp water
- Optional garnish: sliced green onions, sesame seeds
Instructions
- Place chicken in the crock pot in an even layer.
- In a bowl, whisk soy sauce, brown sugar, apple juice, vinegar, sesame oil, garlic, ginger, smoked paprika, vanilla, and black pepper.
- Pour sauce over chicken, cover, and cook on low for 5–6 hours or high for 3–4 hours until tender.
- Remove chicken and whisk cornstarch with water into the sauce.
- Return chicken and cook on high for 15–20 minutes until sauce thickens.
- Serve over rice and garnish if desired.
Notes
- Flavor deepens the longer it cooks on low.
- For a gluten-free version, use a gluten-free soy sauce and verify vanilla and paprika are gluten-free.
- Stir in a splash of water or chicken broth if the sauce becomes too thick before thickening with cornstarch.
- Garnish with sliced green onions and sesame seeds for presentation.
