- 2½ lb potatoes, peeled and diced
- 1 small onion, finely chopped
- 4 cups chicken broth
- 1 packet ranch seasoning mix
- 1 tsp garlic powder
- ½ tsp black pepper
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 6 slices turkey bacon, cooked and crumbled
- Optional: chopped green onions for garnish
Instructions
- Add diced potatoes, onion, chicken broth, ranch seasoning, garlic powder, and black pepper to the crock pot.
- Stir to combine, then cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are very tender.
- Use a potato masher or immersion blender to partially mash the soup to your desired consistency.
- Stir in heavy cream and shredded cheddar cheese until melted and smooth.
- Add crumbled turkey bacon and stir well.
- Cover and cook for an additional 15–20 minutes on low.
- Taste and adjust seasoning if needed before serving.
Notes
- For a thicker soup, mash more of the potatoes or puree to your desired texture.
- To lighten it, substitute heavy cream with half-and-half or milk.
- Stir cheese in off the heat to keep it silky smooth.
- Garnish with chopped green onions for color and a flavor pop.
