Description

Crispy Zucchini Fritters are golden, crispy, protein-packed bites that fit perfectly into a high-protein, low-carb vegetarian lifestyle.


Ingredients

  • 2 medium zucchini, grated
  • ½ tsp salt
  • 2 large eggs
  • ½ cup plain Greek yogurt
  • ½ cup shredded mozzarella or feta cheese
  • ¼ cup almond flour
  • 2 tbsp grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 2 tbsp chopped fresh parsley or dill
  • Olive oil spray

Instructions

  1. Place grated zucchini in a clean towel, sprinkle with salt, and squeeze out as much liquid as possible.
  2. In a bowl, combine zucchini, eggs, Greek yogurt, mozzarella or feta, almond flour, Parmesan, garlic powder, pepper, and herbs. Mix until well combined.
  3. For skillet method: Heat a lightly oiled pan over medium heat. Spoon mixture into small patties and cook 3–4 minutes per side until golden and crispy.
  4. For air fryer method: Spray basket with oil, add fritters, and air fry at 375°F (190°C) for 10–12 minutes, flipping halfway.
  5. Remove and let cool slightly before serving.

Notes

  • For extra crispiness, squeeze as much moisture from the zucchini as possible before mixing.
  • These fritters are naturally gluten-free when using almond flour.
  • To make dairy-free, substitute dairy-free yogurt and cheese.
