Crispy Zucchini Fritters are golden, crispy, protein-packed bites that fit perfectly into a high-protein, low-carb vegetarian lifestyle.

- 2 medium zucchini, grated
- ½ tsp salt
- 2 large eggs
- ½ cup plain Greek yogurt
- ½ cup shredded mozzarella or feta cheese
- ¼ cup almond flour
- 2 tbsp grated Parmesan cheese
- 1 tsp garlic powder
- ½ tsp black pepper
- 2 tbsp chopped fresh parsley or dill
- Olive oil spray
Instructions
- Place grated zucchini in a clean towel, sprinkle with salt, and squeeze out as much liquid as possible.
- In a bowl, combine zucchini, eggs, Greek yogurt, mozzarella or feta, almond flour, Parmesan, garlic powder, pepper, and herbs. Mix until well combined.
- For skillet method: Heat a lightly oiled pan over medium heat. Spoon mixture into small patties and cook 3–4 minutes per side until golden and crispy.
- For air fryer method: Spray basket with oil, add fritters, and air fry at 375°F (190°C) for 10–12 minutes, flipping halfway.
- Remove and let cool slightly before serving.
Notes
- For extra crispiness, squeeze as much moisture from the zucchini as possible before mixing.
- These fritters are naturally gluten-free when using almond flour.
- To make dairy-free, substitute dairy-free yogurt and cheese.
