- 1 medium sweet potato, peeled and grated
- ½ small onion, finely chopped
- 2 cloves garlic, minced

- 2 tbsp all-purpose flour or chickpea flour
- 2 tbsp olive oil, for cooking
- Avocado Cilantro Sauce:
- 1 ripe avocado
- ¼ cup plain yogurt
- 2 tbsp fresh cilantro
- 1 tbsp lime juice
- 1 clove garlic
- Salt to taste
Instructions
- Cook red lentils in boiling water for 10–12 minutes until soft; drain well.
- In a large bowl, combine cooked lentils, grated sweet potato, onion, garlic, cumin, paprika, salt, and pepper.
- Stir in flour until the mixture holds together.
- Form mixture into small patties.
- Heat olive oil in a skillet over medium heat.
- Cook patties for 3–4 minutes per side until golden and crispy.
- Blend all sauce ingredients until smooth and creamy.
- Serve patties warm with avocado cilantro sauce.

- Yields 4 servings.
- Perfect as a healthy snack, light dinner, or meatless main.
- If the mixture is too sticky, chill for 10–15 minutes before shaping.
