Description

Crispy Sweet Potato and Red Lentil Patties: Golden on the outside, tender on the inside, these patties are packed with flavor and wholesome ingredients.


Ingredients

  • 1 cup red lentils, rinsed
  • 1 medium sweet potato, peeled and grated
  • ½ small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp all-purpose flour or chickpea flour
  • 2 tbsp olive oil, for cooking
  • Avocado Cilantro Sauce:
  • 1 ripe avocado
  • ¼ cup plain yogurt
  • 2 tbsp fresh cilantro
  • 1 tbsp lime juice
  • 1 clove garlic
  • Salt to taste

Instructions

  1. Cook red lentils in boiling water for 10–12 minutes until soft; drain well.
  2. In a large bowl, combine cooked lentils, grated sweet potato, onion, garlic, cumin, paprika, salt, and pepper.
  3. Stir in flour until the mixture holds together.
  4. Form mixture into small patties.
  5. Heat olive oil in a skillet over medium heat.
  6. Cook patties for 3–4 minutes per side until golden and crispy.
  7. Blend all sauce ingredients until smooth and creamy.
  8. Serve patties warm with avocado cilantro sauce.
