Description

Crispy Dill Pickle Parmesan Chicken is a bold, tangy, and ultra-crispy main dish featuring pickle juice brine and a parmesan crust for serious crunch.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried dill
  • ½ tsp paprika
  • ½ tsp black pepper
  • 1 large egg
  • 2 tbsp olive oil

Instructions

  1. Place chicken in a bowl or zip-top bag and pour pickle juice over it. Marinate in the refrigerator for at least 30 minutes, up to 4 hours.
  2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. In a shallow bowl, mix breadcrumbs, Parmesan, garlic powder, dried dill, paprika, and pepper.
  4. Beat the egg in a separate bowl.
  5. Remove chicken from marinade and pat dry.
  6. Dip each piece into egg, then coat thoroughly in the breadcrumb mixture.
  7. Place on baking sheet and drizzle lightly with olive oil.
  8. Bake for 25–30 minutes, until golden and cooked through.
  9. Let rest for 5 minutes before serving.

  • For extra crunch, press the breadcrumbs firmly onto the chicken.
  • Line the baking sheet with parchment for easy cleanup.
  • Let the chicken rest 5 minutes before serving to reabsorb juices.
  • Use gluten free breadcrumbs if needed for a gluten free option.
