- 4 boneless skinless chicken breasts
- 1 cup dill pickle juice
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried dill
- ½ tsp paprika
- ½ tsp black pepper
- 1 large egg
- 2 tbsp olive oil
Instructions
- Place chicken in a bowl or zip-top bag and pour pickle juice over it. Marinate in the refrigerator for at least 30 minutes, up to 4 hours.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow bowl, mix breadcrumbs, Parmesan, garlic powder, dried dill, paprika, and pepper.
- Beat the egg in a separate bowl.
- Remove chicken from marinade and pat dry.
- Dip each piece into egg, then coat thoroughly in the breadcrumb mixture.
- Place on baking sheet and drizzle lightly with olive oil.
- Bake for 25–30 minutes, until golden and cooked through.
- Let rest for 5 minutes before serving.

- For extra crunch, press the breadcrumbs firmly onto the chicken.
- Line the baking sheet with parchment for easy cleanup.
- Let the chicken rest 5 minutes before serving to reabsorb juices.
- Use gluten free breadcrumbs if needed for a gluten free option.
- Increase dried dill for extra tangy flavor.
- If pickle juice is unavailable, a light brine substitute can be used.
