- 3 garlic cloves, minced
- 2 cups cauliflower florets
- 2 cups broccoli florets
- 1 cup sliced carrots
- 1 cup diced potatoes
- 1 cup vegetable broth
- 1 cup heavy cream
- 1 cup shredded mozzarella or cheddar (halal-certified)
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- Topping: 1 cup breadcrumbs
- 2 tbsp melted butter
- ¼ cup grated Parmesan (optional)
Instructions
- Preheat your oven to 375°F (190°C). Grease a medium casserole dish.
- Heat olive oil in a large pan over medium heat. Add onion and garlic; sauté 2–3 minutes until fragrant.
- Add cauliflower, broccoli, carrots, and potatoes. Cook 5 minutes to soften slightly.
- Pour in vegetable broth, heavy cream, thyme, rosemary, salt, and pepper. Stir and simmer 5–7 minutes until the sauce begins to thicken.
- Stir in shredded mozzarella or cheddar until melted and creamy.
- Transfer the mixture to the casserole dish.
- In a bowl, mix breadcrumbs with melted butter and Parmesan. Sprinkle evenly over the top.
- Bake for 20–25 minutes until golden and bubbly.
- Let cool slightly before serving.
Notes
- You can substitute other winter vegetables (e.g., turnips, Brussels sprouts) based on what you have on hand.
- For a lighter version, use half-and-half or a lighter cream alternative and reduced-fat cheese.
- To keep this vegan, omit the cheese and use a plant-based cream and vegan cheese; use olive oil breadcrumbs for the topping.
