Ingredients

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 cups cauliflower florets
  • 2 cups broccoli florets
  • 1 cup sliced carrots
  • 1 cup diced potatoes
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella or cheddar (halal-certified)
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • Topping: 1 cup breadcrumbs
  • 2 tbsp melted butter
  • ¼ cup grated Parmesan (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a medium casserole dish.
  2. Heat olive oil in a large pan over medium heat. Add onion and garlic; sauté 2–3 minutes until fragrant.
  3. Add cauliflower, broccoli, carrots, and potatoes. Cook 5 minutes to soften slightly.
  4. Pour in vegetable broth, heavy cream, thyme, rosemary, salt, and pepper. Stir and simmer 5–7 minutes until the sauce begins to thicken.
  5. Stir in shredded mozzarella or cheddar until melted and creamy.
  6. Transfer the mixture to the casserole dish.
  7. In a bowl, mix breadcrumbs with melted butter and Parmesan. Sprinkle evenly over the top.
  8. Bake for 20–25 minutes until golden and bubbly.
  9. Let cool slightly before serving.

Notes

  • You can substitute other winter vegetables (e.g., turnips, Brussels sprouts) based on what you have on hand.
  • For a lighter version, use half-and-half or a lighter cream alternative and reduced-fat cheese.
  • To keep this vegan, omit the cheese and use a plant-based cream and vegan cheese; use olive oil breadcrumbs for the topping.
