- 2 tbsp olive oil
- 1 lb boneless skinless chicken breasts, diced
- Salt and pepper to taste
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- ½ tsp chili flakes (optional)
- ¼ cup sun-dried tomatoes, chopped
- 4 cups chicken broth (halal)
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 cup baby spinach
- 1 tbsp cornstarch + 1 tbsp water (optional, for thickening)
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken, season with salt and pepper, and sauté until golden and cooked through. Remove and set aside.
- In the same pot, sauté onion until soft, then add garlic, thyme, oregano, and chili flakes. Cook for 1 minute.
- Stir in sun-dried tomatoes and pour in chicken broth. Bring to a simmer.
- Add cream and Parmesan, stirring until melted and smooth.
- Return chicken to the pot. Simmer for 10–15 minutes.
- If desired, mix cornstarch with water and stir into soup to thicken.
- Add spinach and cook until wilted.
- Garnish with fresh herbs and serve warm with crusty bread.
Notes
- For a lighter version, substitute half-and-half for all or part of the heavy cream.
- Leftover chicken can be used; store soup in the fridge for up to 3–4 days.
- To thicken, stir in a cornstarch slurry as directed (optional).
- Greens can be swapped with kale or spinach; garnish with fresh basil or parsley.
