  • 1 tbsp olive oil
  • 1 lb halal Italian-style chicken or turkey sausage, casings removed
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • 1 can (15 oz) crushed tomatoes
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook rigatoni according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned and crumbled, about 5–6 minutes.
  3. Add onion and cook for 3 minutes until softened. Stir in garlic, Italian seasoning, and red pepper flakes; cook for 1 minute.
  4. Pour in crushed tomatoes and stir to combine. Simmer for 5 minutes.
  5. Lower the heat and stir in heavy cream and Parmesan. Season with salt and pepper. Simmer until the sauce thickens slightly.
  6. Add cooked rigatoni to the skillet and toss to coat in the sauce. Cook for another 2–3 minutes until heated through.
  7. Garnish with fresh herbs and serve hot.
