  • 1 lb Italian turkey sausage, casings removed
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 (16 oz) package potato gnocchi
  • 1½ cups baby spinach
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Optional: Red pepper flakes for a little heat

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sausage and cook until browned, breaking it apart with a spoon.
  2. Add diced onion and garlic. Sauté for 3–4 minutes until soft and fragrant.
  3. Pour in chicken broth and bring to a simmer.
  4. Add gnocchi and cook for 3–4 minutes, or until gnocchi float and are tender.
  5. Reduce heat to low. Stir in heavy cream, Parmesan cheese, and Italian seasoning.
  6. Add spinach and cook just until wilted. Season with salt, pepper, and red pepper flakes if using.
  7. Serve hot with extra Parmesan and warm bread on the side.

Notes

  • Use turkey sausage for a lighter option; regular pork sausage will add more fat.
  • Do not overcook gnocchi; add at the end to avoid sogginess.
