- 1½ lbs boneless, skinless chicken breasts
- 1 packet ranch seasoning mix
- 8 oz block cream cheese, softened
- ½ cup low-sodium chicken broth
- ½ cup plain Greek yogurt or sour cream
- 1 cup shredded cheddar cheese (optional)
- 1 tsp garlic powder
- ½ tsp black pepper
- Fresh parsley or chives, for garnish
Instructions
- Place chicken breasts in the bottom of your crock pot.
- In a bowl, mix together ranch seasoning, cream cheese, chicken broth, Greek yogurt (or sour cream), garlic powder, and pepper.
- Pour the mixture over the chicken. Cover and cook on low for 5–6 hours or high for 2.5–3 hours, until the chicken is tender and easily shredded.
- Shred the chicken with two forks and stir to combine with the creamy sauce.
- If using, sprinkle cheddar cheese over the top and cook on high for 10–15 more minutes until melted.
- Garnish with fresh herbs and serve over rice, mashed potatoes, pasta, or with steamed veggies.
Notes
- Tip: For an even richer sauce, use full-fat cream cheese and full-fat yogurt/sour cream.
- Gluten-free option: Use a gluten-free ranch seasoning mix if needed.
