- 1 lb ground beef (halal)
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 3 cups potatoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chiles
- 3 cups beef broth
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- ½ tsp oregano
- Salt and pepper to taste
- 1½ cups heavy cream or half-and-half
- 1 cup shredded cheddar cheese
- Fresh cilantro or green onions (optional)
Instructions
- In a large pot, brown the ground beef with the diced onion and garlic. Drain any excess fat.
- Add bell pepper, potatoes, black beans, pinto beans, corn, and diced tomatoes.
- Pour in beef broth and stir in chili powder, smoked paprika, cumin, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20–25 minutes until potatoes are tender.
- Stir in heavy cream and cheddar cheese until fully melted and creamy.
- Serve hot with cilantro or green onions if desired.
