Instructions
- Preheat oven to 375°F and grease a 9×9″ baking dish with olive oil.
- In a skillet over medium, warm 1 tablespoon oil, sauté garlic 30 seconds until fragrant.
- Arrange chicken slices in the dish; season with salt, pepper, and half the Italian seasoning.
- Layer zucchini ribbons over chicken, tucking edges under for even coverage.
- Dollop cottage cheese across the top, then sprinkle mozzarella and Parmesan evenly.
- Bake 25–28 minutes until chicken is cooked through and cheese is golden and bubbly.
- Let rest 5 minutes so the sauce sets, then cut into squares and serve straight from the dish.
