- 3 cups cooked shredded chicken (fresh, leftover, or rotisserie)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chiles
- 4 cups chicken broth
- 1½ tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp oregano
- Salt and pepper to taste
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- Optional toppings: tortilla strips, fresh cilantro, lime wedges, avocado, jalapeños, more cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, and bell peppers. Sauté until softened.
- Stir in shredded chicken, black beans, corn, and diced tomatoes.
- Add chicken broth, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Mix well.
- Bring to a simmer and cook for 15–20 minutes to blend flavors.
- Add cheddar cheese and stir until creamy.
- Serve hot with tortilla strips and your favorite toppings.
Notes
- For extra creaminess, melt cream cheese completely before stirring in cheddar.
- Use leftover or rotisserie chicken to save time.
