Ingredients

  • 2 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen peas and carrots
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon paprika
  • 2 tablespoons chopped fresh parsley

Instructions

  • Heat butter and oil in a skillet; cook diced chicken with salt and pepper until golden.
  • Sauté onion and garlic, then stir in rice.
  • Add broth and bring to a simmer; cover and cook until rice is tender.
  • Stir in heavy cream, vegetables, cheese, and paprika.
  • Simmer until thickened and creamy. Top with fresh parsley and serve.
