Ingredients

  • 1 lb boneless skinless chicken breast, diced
  • 1 tbsp olive oil
  • 2 tsp Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper, to taste
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 3/4 cup cooking cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • Optional garnish: chopped parsley or green onions

Instructions

  1. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat. Cook chicken until golden and fully cooked. Remove and set aside.
  3. In the same pan, melt butter and sauté minced garlic for 30 seconds until fragrant.
  4. Add cooking cream and Parmesan cheese, stirring until smooth and creamy.
  5. Return chicken to the pan and simmer for 3-4 minutes until coated in sauce.
  6. Meanwhile, cook rice in chicken broth according to package instructions.
  7. Assemble bowls by layering rice and topping with creamy Cajun chicken. Garnish if desired.

  • For extra creaminess, add a splash more cooking cream or Parmesan.
  • Use leftover cooked chicken to speed up weeknight prep.
