Ingredients

  • 1 lb potato gnocchi
  • 1 tbsp olive oil
  • 1 lb halal Italian-style chicken or turkey sausage, casings removed
  • 2 cups cubed butternut squash (½-inch pieces)
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp ground nutmeg
  • 1 cup baby spinach (optional)
  • Fresh parsley, for garnish

Instructions

  1. In a large skillet over medium heat, add olive oil and cook sausage until browned and cooked through. Remove from pan and set aside.
  2. In the same skillet, add onion and garlic. Sauté until softened, about 3 minutes.
  3. Add cubed butternut squash and cook for 8–10 minutes, stirring occasionally, until squash is fork-tender.
  4. Stir in heavy cream, salt, pepper, and nutmeg. Simmer for 2–3 minutes, then mash the squash slightly to help thicken the sauce.
  5. Meanwhile, cook gnocchi according to package instructions. Drain and set aside.
  6. Return sausage to the skillet and add cooked gnocchi. Stir to coat everything in the creamy sauce.
  7. Add Parmesan cheese and spinach (if using), and cook for 2–3 more minutes until spinach wilts and cheese melts.
  8. Garnish with fresh parsley and serve warm.

Notes

  • For crisper gnocchi, sear drained gnocchi in a separate hot skillet with a little oil before adding to the sauce.
  • Use low-sodium salt or adjust salt to taste if preferred.
  • For a lighter version, substitute half-and-half for heavy cream or use milk with a small amount of cream.
  • Leftovers can be refrigerated for up to 2 days.
