- 1 lb potato gnocchi
- 1 tbsp olive oil
- 1 lb halal Italian-style chicken or turkey sausage, casings removed
- 2 cups cubed butternut squash (½-inch pieces)
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp ground nutmeg
- 1 cup baby spinach (optional)
- Fresh parsley, for garnish
Instructions
- In a large skillet over medium heat, add olive oil and cook sausage until browned and cooked through. Remove from pan and set aside.
- In the same skillet, add onion and garlic. Sauté until softened, about 3 minutes.
- Add cubed butternut squash and cook for 8–10 minutes, stirring occasionally, until squash is fork-tender.
- Stir in heavy cream, salt, pepper, and nutmeg. Simmer for 2–3 minutes, then mash the squash slightly to help thicken the sauce.
- Meanwhile, cook gnocchi according to package instructions. Drain and set aside.
- Return sausage to the skillet and add cooked gnocchi. Stir to coat everything in the creamy sauce.
- Add Parmesan cheese and spinach (if using), and cook for 2–3 more minutes until spinach wilts and cheese melts.
- Garnish with fresh parsley and serve warm.
Notes
- For crisper gnocchi, sear drained gnocchi in a separate hot skillet with a little oil before adding to the sauce.
- Use low-sodium salt or adjust salt to taste if preferred.
- For a lighter version, substitute half-and-half for heavy cream or use milk with a small amount of cream.
- Leftovers can be refrigerated for up to 2 days.
