Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/4 teaspoons salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 cups old-fashioned oats
  • 3/4 cup dried cranberries
  • Optional: 1/2 cup chopped pecans
  • Optional: 1/4 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and beat until smooth and incorporated.
  4. In a separate bowl whisk together the flour, cinnamon, and salt.
  5. Add the dry ingredients to the butter mixture and stir until just combined.
  6. Fold in the oats and dried cranberries (and any optional add-ins).
  7. Scoop 1.5 Tbsp portions of dough onto the prepared baking sheet, spacing 2 inches apart.
  8. Bake 10–12 minutes, until edges are lightly golden.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Store in an airtight container for up to one week or freeze for longer storage.

Notes

  • Pro Tip: Slightly underbake for chewier centers and let cookies finish on the cooling rack.
  • Chill the dough 20 minutes for thicker cookies and less spread.
  • Soak very firm dried cranberries in warm water 5 minutes, then pat dry before using.
  • Variation: Add 1 tablespoon orange zest for Cranberry-Orange Oatmeal Cookies.
  • Freezing: Freeze baked cookies or raw scoops; add 1–2 minutes to baking time when baking from frozen.
