Ingredients
4 salmon fillets (6 oz each)
1/2 cup cooked shrimp, chopped
1/2 cup lump crab meat
2 tablespoons mayonnaise
2 tablespoons cream cheese, softened
1 teaspoon Dijon mustard
1 teaspoon Old Bay seasoning
2 tablespoons chopped green onions
1 tablespoon chopped fresh parsley
1/2 teaspoon garlic powder
Salt and pepper, to taste
1 tablespoon lemon juice
1 tablespoon olive oil
Instructions
Preheat oven to 375°F. Mix shrimp, crab, and seasonings. Slice a pocket in each salmon fillet and stuff with filling. Drizzle with olive oil, season, and bake for 18–20 minutes until flaky.
Notes
For extra flavor, squeeze fresh lemon juice over the stuffed salmon before serving. Serve with roasted vegetables, rice, or a light salad.
