Description

Cozy French Onion Short Rib Stew is a deeply comforting, slow-cooked dish featuring caramelized onions, fall-apart short ribs, and a rich beefy broth.


Ingredients

  • 23 lbs beef short ribs (halal)
  • 2 tbsp olive oil
  • 3 large onions, thinly sliced
  • 1 tsp sugar
  • 4 cloves garlic, minced
  • 2 tbsp flour
  • 6 cups beef broth
  • 1 tbsp Worcestershire sauce (ensure halal)
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional toppings: shredded Gruyère or mozzarella, crusty bread, fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Season short ribs with salt and pepper, then sear on all sides until browned. Remove and set aside.
  2. Add onions and sugar to the pot and cook 20–25 minutes, stirring occasionally, until caramelized.
  3. Stir in garlic and cook 1 minute.
  4. Sprinkle flour over the onions and mix well.
  5. Slowly pour in beef broth, stirring until smooth.
  6. Add Worcestershire sauce, thyme, bay leaf, salt, and pepper.
  7. Return the short ribs to the pot.
  8. Cover and simmer 2½–3 hours until meat is tender and falling off the bone.
  9. Remove ribs, shred meat, and discard bones. Return meat to the pot and stir.
  10. Serve warm with cheese-topped crusty bread or a sprinkle of parsley.

  • For a thicker broth, simmer uncovered for the last 15–20 minutes.
