Cowboy Casserole is a hearty, family-friendly bake featuring crispy potatoes, seasoned beef, and melty cheddar.

- 4 cups diced potatoes
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups shredded cheddar cheese
- 1 tsp chili powder
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 cup cream of mushroom soup
- ½ cup milk
- 1 tbsp olive oil
- Optional: chopped green onions for garnish
Instructions
- Preheat oven to 375°F 190°C. Lightly grease a 9×13 inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 2 to 3 minutes until softened.
- Add ground beef and cook until browned. Stir in garlic, chili powder, paprika, salt, and black pepper.
- In a small bowl, whisk together cream of mushroom soup and milk until smooth.
- Spread diced potatoes evenly in the prepared baking dish. Top with the cooked beef mixture.
- Pour the soup mixture evenly over everything.
- Cover with foil and bake for 40 minutes.
- Remove foil, sprinkle cheddar cheese evenly on top, and bake an additional 10 to 15 minutes until cheese is melted and bubbly and potatoes are tender.
- Let rest for 5 minutes before serving. Garnish with green onions if desired.
Notes
- Leftovers refrigerate well and reheat easily for a quick dinner.
- Turn up the heat with extra chili powder or a splash of hot sauce.
- To make a lighter version, use lean ground beef and reduced-fat cheese.
- Assemble the dish up to the point of baking and refrigerate overnight for even easier weeknight meals.
