Description

Cowboy Casserole is a hearty, family-friendly bake featuring crispy potatoes, seasoned beef, and melty cheddar.


Ingredients

  • 4 cups diced potatoes
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups shredded cheddar cheese
  • 1 tsp chili powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup cream of mushroom soup
  • ½ cup milk
  • 1 tbsp olive oil
  • Optional: chopped green onions for garnish

Instructions

  1. Preheat oven to 375°F 190°C. Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 2 to 3 minutes until softened.
  3. Add ground beef and cook until browned. Stir in garlic, chili powder, paprika, salt, and black pepper.
  4. In a small bowl, whisk together cream of mushroom soup and milk until smooth.
  5. Spread diced potatoes evenly in the prepared baking dish. Top with the cooked beef mixture.
  6. Pour the soup mixture evenly over everything.
  7. Cover with foil and bake for 40 minutes.
  8. Remove foil, sprinkle cheddar cheese evenly on top, and bake an additional 10 to 15 minutes until cheese is melted and bubbly and potatoes are tender.
  9. Let rest for 5 minutes before serving. Garnish with green onions if desired.

Notes

  • Leftovers refrigerate well and reheat easily for a quick dinner.
  • Turn up the heat with extra chili powder or a splash of hot sauce.
  • To make a lighter version, use lean ground beef and reduced-fat cheese.
  • Assemble the dish up to the point of baking and refrigerate overnight for even easier weeknight meals.
