- 1 cup cottage cheese
- 1 cup grilled corn kernels (about 2 cobs)
- 1/2 cup diced red bell pepper
- 1/4 cup chopped fresh cilantro
- Optional: extra lime wedges, crumbled cotija or feta cheese
Instructions
- Pat chicken dry and season with chili powder, lime juice, lime zest, salt, and pepper. Marinate for 15–30 minutes if possible.
- Heat grill or skillet to medium-high and cook chicken 5–6 minutes per side until golden and internal temp reaches 165°F. Rest, then slice.
- Grill corn until lightly charred, 8–10 minutes, rotating often. Slice kernels from the cob.
- Spoon cottage cheese into bowl base. Arrange chicken, corn, and bell pepper neatly on top.
- Sprinkle with cilantro, lime juice, and optional crumbled cheese before serving.
