Description

Cottage Cheese and Spinach Crustless Quiche is a light, fluffy, protein-packed brunch dish featuring cottage cheese, spinach, and melty cheese baked into a golden egg base.


Ingredients

  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • ½ cup shredded mozzarella or cheddar cheese
  • ¼ cup milk
  • ¼ cup diced onion
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • Salt to taste

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a pie dish or baking dish.
  2. In a large bowl, whisk eggs until smooth.
  3. Stir in cottage cheese, milk, garlic powder, salt, and pepper.
  4. Fold in chopped spinach, onion, and shredded cheese.
  5. Pour mixture into prepared dish and spread evenly.
  6. Bake for 35–40 minutes until set in the center and lightly golden on top.
  7. Let cool slightly before slicing and serving.
