- 6 large eggs
- 1 cup fresh spinach, chopped

- ¼ cup diced onion
- ½ tsp garlic powder

- Salt to taste
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a pie dish or baking dish.
- In a large bowl, whisk eggs until smooth.
- Stir in cottage cheese, milk, garlic powder, salt, and pepper.
- Fold in chopped spinach, onion, and shredded cheese.
- Pour mixture into prepared dish and spread evenly.
- Bake for 35–40 minutes until set in the center and lightly golden on top.
- Let cool slightly before slicing and serving.
Notes
- Can be made ahead and refrigerated; reheat slices easily.
- For a lower-fat version, use part-skim cottage cheese and low-fat cheese.
- To add more flavor, stir in chopped herbs like parsley or chives.
