Description

These soft and chewy cottage cheese protein cookies are naturally sweetened, high in protein, and perfect for a healthy snack or treat.


Ingredients

Scale
  • 1 cup cottage cheese
  • 1 egg
  • ½ cup oat flour
  • ½ cup protein powder
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt
  • ¼ cup chocolate chips or chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheet with parchment.
  2. Blend cottage cheese until smooth.
  3. Mix with egg, sweetener, and vanilla.
  4. Stir in dry ingredients until dough forms.
  5. Fold in chocolate chips or nuts.
  6. Scoop dough onto baking sheet.
  7. Bake 10–12 mins until golden. Cool and enjoy.

Notes

  • Use blended cottage cheese for a smooth dough.
  • Add extra oat flour if dough feels too wet.
  • Press extra chocolate chips on top before baking.
  • Use vanilla or unflavored protein powder.
  • Store in fridge or freezer for longer freshness.
