Ingredients

- 1 cup cottage cheese
- 1 large egg
- ¼ cup honey or maple syrup
- 1 tsp vanilla extract
- 1 cup oat flour (gluten free if needed)
- ½ cup vanilla or unflavored protein powder
- 1 tsp baking powder
- ¼ tsp salt
- ¼ cup mini dark chocolate chips or raisins
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Blend cottage cheese until smooth.
- In a bowl, whisk blended cottage cheese, egg, honey, and vanilla.
- Stir in oat flour, protein powder, baking powder, and salt until combined.
- Fold in chocolate chips or raisins.
- Scoop dough onto baking sheet and gently flatten each cookie.
- Bake for 10–12 minutes, until set and lightly golden on the edges.
- Cool before serving.
Notes
- Yields 12 cookies
- Line the baking sheet with parchment paper for easy removal
- Can use gluten-free oat flour to keep the recipe gluten-free
