Description

Cottage Cheese Egg Bake is a fluffy, protein-packed breakfast casserole that’s perfect for meal prep and busy mornings.


Ingredients

  • 8 large eggs
  • 1 cup cottage cheese
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup fresh spinach, chopped
  • ½ cup diced bell pepper
  • ½ cup diced onion
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×9 inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Sauté onion and bell pepper for 3 to 4 minutes until softened. Add spinach and cook until wilted. Remove from heat.
  3. In a large bowl, whisk together eggs, cottage cheese, milk, garlic powder, salt, and black pepper until well combined.
  4. Stir in sautéed vegetables and half of the shredded cheddar cheese.
  5. Pour mixture into the prepared baking dish and sprinkle remaining cheddar cheese on top.
  6. Bake for 30 to 35 minutes until the center is set and the top is lightly golden.
  7. Let cool for 5 to 10 minutes before slicing and serving.
  8. Slice and portion for meal prep or serve immediately.
