Description
High-protein smash chicken tacos topped with a creamy cottage cheese dill pickle slaw. Crispy edges, tangy crunch, and ready in 20 minutes.

- 1 lb ground chicken
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2–3/4 tsp kosher salt, plus more to taste
- Black pepper
- 1 cup finely shredded cabbage
- 1/4 cup chopped dill pickles
- 1/2 cup cottage cheese
- 6 small tortillas (flour or corn)
- 1 tbsp olive oil
- Optional: 1 tbsp pickle brine, chopped fresh dill or parsley
Instructions
- Mix chicken with paprika, garlic, salt, and pepper; form 6 loose balls.
- Heat a lightly oiled skillet on high. Add 2–3 balls; smash thin (4–5 inches). Cook 2–3 minutes until browned; flip and cook 1–2 minutes more. Repeat.
- Stir cottage cheese until creamy; fold in pickles and cabbage. Season with a pinch of salt and optional pickle brine.
- Warm tortillas in a dry skillet or over a flame until pliable.
- Build tacos: 1 patty per tortilla, top with generous dill pickle slaw. Serve immediately.
Notes
- Smash while the pan is very hot for a crisp crust.
- Use parchment between spatula and meat if sticking.
- Add chipotle or cayenne for heat.
- Swap ground turkey if preferred.
- Keep patties and slaw separate for meal prep; assemble just before eating.
