Instructions
- Preheat oven to 350°F (175°C) and grease a mini muffin tin or line with silicone liners.
- Blend cottage cheese, eggs, milk and melted butter until completely smooth.
- In a bowl, whisk together flour, sugar, baking powder, cinnamon and salt.
- Pour blended wet mixture into dry ingredients and gently stir until just combined.
- Spoon a small layer of batter into each mini cup, sprinkle a little cinnamon-brown sugar, then top with more batter. Swirl gently with a toothpick.
- Bake 15–18 minutes until golden and slightly springy. Cool for a few minutes in the pan, then remove.
- Whisk together yogurt and maple syrup for the dip. Serve bites warm with dip or drizzle directly over them.
- Store cooled bites in an airtight container up to 4 days or freeze single-layer then bag for up to 2 months.
