  • 2 large eggs
  • 1 cup milk (dairy or plant-based)
  • 1 1/4 cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons melted butter or neutral oil
  • For swirl: 3 tablespoons brown sugar + 1 teaspoon ground cinnamon
  • Maple dip: 1/2 cup plain or vanilla yogurt + 2 tablespoons maple syrup
  • Optional: 1/4 cup chopped nuts, 1/4 cup applesauce, 1/4 cup pumpkin puree, 1 scoop vanilla protein powder

Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin tin or line with silicone liners.
  2. Blend cottage cheese, eggs, milk and melted butter until completely smooth.
  3. In a bowl, whisk together flour, sugar, baking powder, cinnamon and salt.
  4. Pour blended wet mixture into dry ingredients and gently stir until just combined.
  5. Spoon a small layer of batter into each mini cup, sprinkle a little cinnamon-brown sugar, then top with more batter. Swirl gently with a toothpick.
  6. Bake 15–18 minutes until golden and slightly springy. Cool for a few minutes in the pan, then remove.
  7. Whisk together yogurt and maple syrup for the dip. Serve bites warm with dip or drizzle directly over them.
  8. Store cooled bites in an airtight container up to 4 days or freeze single-layer then bag for up to 2 months.
