  • 1 1/4 cups oats
  • 1/4 cup maple syrup
  • 1 large egg
  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend the cottage cheese in a blender or food processor until completely smooth.
  3. In a mixing bowl combine the blended cottage cheese, maple syrup, egg, and vanilla extract until well mixed.
  4. Stir in the oats, cinnamon, baking powder, and salt until a thick, slightly sticky dough forms.
  5. Scoop portions of dough onto the prepared baking sheet and space them slightly apart.
  6. Flatten each mound gently with the back of a spoon to form cookie shapes.
  7. Bake for 12–15 minutes until the cookies are set and lightly golden on the bottom.
  8. Cool slightly on the baking sheet before serving; cookies will firm up as they cool.

Notes

  • Blend cottage cheese thoroughly to avoid curds in the dough.
  • Do not overbake; cookies should remain soft and tender.
  • Use quick oats for a softer texture or rolled oats for more chew.
  • If dough feels too wet add 1 tablespoon oats; if too dry add a splash of milk.
