Instructions

  1. In a medium bowl whisk together cottage cheese, eggs, sugar, and cinnamon until combined.
  2. Add the flour and baking powder; stir gently until a thick, scoopable batter forms.
  3. Fold in the diced apples, a pinch of salt (optional), and any optional add-ins.
  4. Heat about 1/2″ of oil in a skillet over medium heat until shimmering and a small drop of batter sizzles.
  5. Drop heaping spoonfuls of batter into the oil, flatten slightly, and fry 2–3 minutes per side until deep golden.
  6. Transfer fritters to paper towels to drain excess oil and keep warm in a low oven if making a batch.
