Copycat Nutter Butters from Scratch: Soft, golden peanut butter cookies sandwiched with a rich, creamy filling—the nostalgic treat you crave, made better at home.


Ingredients

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter, softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • Peanut Butter Filling: ½ cup creamy peanut butter
  • Peanut Butter Filling: ¼ cup unsalted butter, softened
  • Peanut Butter Filling: 1½ cups powdered sugar
  • Peanut Butter Filling: 1–2 tbsp milk (as needed for consistency)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, beat peanut butter, softened butter, brown sugar, and granulated sugar until fluffy.
  3. Add egg and vanilla, mix well.
  4. In another bowl, whisk together flour, baking soda, baking powder, and salt. Add to the wet mixture and mix until dough forms.
  5. Roll dough into small oval shapes and press a crisscross pattern on top with a fork.
  6. Bake 8–10 minutes until lightly golden, then cool completely.
  7. For the filling, beat peanut butter, butter, powdered sugar, and milk until creamy.
  8. Spread filling on one cookie and top with another to create sandwiches.

Notes

  • Chill the dough slightly if it’s too soft to roll for easier shaping.
  • Keep the filling thick enough to hold the sandwich; add more powdered sugar if needed.
  • Store cookies in an airtight container at room temperature for up to 3 days, or freeze for longer.
