- 1 cup creamy peanut butter
- ½ cup unsalted butter, softened
- 1 cup brown sugar
- ½ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- Peanut Butter Filling: ½ cup creamy peanut butter
- Peanut Butter Filling: ¼ cup unsalted butter, softened
- Peanut Butter Filling: 1½ cups powdered sugar
- Peanut Butter Filling: 1–2 tbsp milk (as needed for consistency)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, beat peanut butter, softened butter, brown sugar, and granulated sugar until fluffy.
- Add egg and vanilla, mix well.
- In another bowl, whisk together flour, baking soda, baking powder, and salt. Add to the wet mixture and mix until dough forms.
- Roll dough into small oval shapes and press a crisscross pattern on top with a fork.
- Bake 8–10 minutes until lightly golden, then cool completely.
- For the filling, beat peanut butter, butter, powdered sugar, and milk until creamy.
- Spread filling on one cookie and top with another to create sandwiches.
Notes
- Chill the dough slightly if it’s too soft to roll for easier shaping.
- Keep the filling thick enough to hold the sandwich; add more powdered sugar if needed.
- Store cookies in an airtight container at room temperature for up to 3 days, or freeze for longer.
