Description

Comforting Chicken Rice Casserole is a warm, creamy, family-friendly dish that brings together tender chicken, fluffy rice, and rich creaminess in one easy baked casserole.


Ingredients

  • 2 cups cooked shredded chicken
  • 1.5 cups uncooked long-grain rice
  • 3 cups chicken broth
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • Optional: sliced green onions
  • Optional: crushed crackers or breadcrumbs for topping

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 baking dish.
  2. In a large bowl, whisk together chicken broth, cream cheese, parsley, garlic powder, onion powder, paprika, salt, and pepper until mostly smooth.
  3. Add uncooked rice, shredded chicken, onion, and garlic to the bowl. Stir until everything is well combined.
  4. Pour the mixture into the baking dish and spread evenly.
  5. Cover tightly with foil and bake for 50 minutes.
  6. Remove foil, sprinkle cheddar cheese on top, and bake another 10–15 minutes until melted and bubbly.
  7. Let rest for 5–10 minutes before serving, then top with green onions or crunchy breadcrumbs if desired.
