- 1.5 cups uncooked long-grain rice
- 3 cups chicken broth
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tsp dried parsley
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- Salt and black pepper to taste
- Optional: sliced green onions
- Optional: crushed crackers or breadcrumbs for topping
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 baking dish.
- In a large bowl, whisk together chicken broth, cream cheese, parsley, garlic powder, onion powder, paprika, salt, and pepper until mostly smooth.
- Add uncooked rice, shredded chicken, onion, and garlic to the bowl. Stir until everything is well combined.
- Pour the mixture into the baking dish and spread evenly.
- Cover tightly with foil and bake for 50 minutes.
- Remove foil, sprinkle cheddar cheese on top, and bake another 10–15 minutes until melted and bubbly.
- Let rest for 5–10 minutes before serving, then top with green onions or crunchy breadcrumbs if desired.
