For the Chicken Marinade:
- 1 lb boneless, skinless chicken thighs
- 1/2 cup canned coconut milk
- Juice of 2 limes
- 2 cloves garlic, minced
- 1 tbsp fresh grated ginger
- 1 tbsp soy sauce
- 1 tbsp honey
- Salt and pepper to taste
For the Tacos:
- 8 small flour or corn tortillas
- 1 cup red cabbage, finely shredded
- 1/2 cup carrots, julienned
- 1/4 cup fresh cilantro, chopped
- 1/4 cup green onions, thinly sliced
- 1 avocado, sliced
For the Sweet Chili Drizzle:
- 1/3 cup sweet chili sauce
- 1 tbsp lime juice
- 1 tsp sriracha (optional)
Instructions
- Whisk marinade ingredients, coat chicken, and marinate for at least 30 minutes.
- Grill or pan-cook chicken until fully cooked; slice.
- Mix sweet chili drizzle ingredients in a bowl.
- Warm tortillas, layer with cabbage, carrots, chicken, avocado, cilantro, and green onions.
- Drizzle with sauce and serve immediately.
Notes
- Chicken can be grilled or cooked on a stovetop.
- Marinate longer for deeper flavor (up to 8 hours).
- Add extra sriracha for more heat.
- Use corn tortillas for gluten-free option.
