  • 1 lb boneless, skinless chicken thighs
  • 1/2 cup canned coconut milk
  • Juice of 2 limes
  • 2 cloves garlic, minced
  • 1 tbsp fresh grated ginger
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • Salt and pepper to taste

For the Tacos:

  • 8 small flour or corn tortillas
  • 1 cup red cabbage, finely shredded
  • 1/2 cup carrots, julienned
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, thinly sliced
  • 1 avocado, sliced

For the Sweet Chili Drizzle:

  • 1/3 cup sweet chili sauce
  • 1 tbsp lime juice
  • 1 tsp sriracha (optional)

Instructions

  • Whisk marinade ingredients, coat chicken, and marinate for at least 30 minutes.
  • Grill or pan-cook chicken until fully cooked; slice.
  • Mix sweet chili drizzle ingredients in a bowl.
  • Warm tortillas, layer with cabbage, carrots, chicken, avocado, cilantro, and green onions.
  • Drizzle with sauce and serve immediately.
