Christmas Pinwheel Sugar Cookies are festive, soft sugar cookies swirled with red and green, perfect for holiday trays and gifting.
Ingredients

- 2½ cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ tsp almond extract (optional)
- ½ tsp baking powder
- ¼ tsp salt
- Red food coloring
- Green food coloring
- Holiday sprinkles (optional)
Instructions
- In a mixing bowl, cream the butter and sugar until light and fluffy.
- Add egg, vanilla, and almond extract (if using). Mix well.
- In another bowl, whisk flour, baking powder, and salt.
- Gradually add dry ingredients to the wet ingredients until a soft dough forms.
- Divide dough into three equal portions. Leave one plain, tint one red, and tint one green.
- Roll each dough portion into a rectangle between two sheets of parchment paper.
- Stack the layers: plain on bottom, then red, then green. Gently press together.
- Roll tightly into a log and wrap in plastic wrap. Chill for at least 2 hours.
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment.
- Slice the log into ¼-inch rounds and place on baking sheets. Add sprinkles if desired.
- Bake for 9–11 minutes until set but not browned.
- Cool on a rack and enjoy!
Notes
- Chill the dough for at least 2 hours to set the pinwheel colors.
- Yield: about 24–30 cookies.
- Store baked cookies in an airtight container at room temperature for up to 3 days.
