Chili Lime Chickpea Cauliflower Wrap: Bold, zesty, and crispy, this plant-based wrap features chili-lime roasted chickpeas and cauliflower tucked into a warm tortilla.

- 1 can chickpeas, drained and rinsed
- 2 cups cauliflower florets
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp garlic powder
- Salt and black pepper to taste
- Juice of 1 lime
- ¼ cup dairy-free yogurt or plain yogurt
- 1 tbsp lime juice
- 1 tbsp chopped fresh cilantro
- Pinch of salt
- 4 large wraps or tortillas
- 1 cup shredded lettuce
- ½ cup sliced red onion
Instructions
- Preheat oven to 400°F (200°C).
- Toss chickpeas and cauliflower with olive oil, chili powder, smoked paprika, garlic powder, salt, and pepper.
- Spread on a baking sheet and roast for 20–25 minutes until golden and slightly crispy.
- Squeeze fresh lime juice over the roasted mixture.
- In a small bowl, whisk together dressing ingredients.
- Warm tortillas slightly.
- Fill each wrap with lettuce, roasted chickpeas and cauliflower, red onion, and drizzle with lime dressing.
- Roll tightly and serve immediately.
Notes
- To make it gluten-free, ensure wraps are gluten-free.
- For a spicier kick, increase chili powder or add jalapeño.
- Chickpeas can be roasted with a bit of cornstarch for extra crispiness.
- Leftovers can be stored refrigerated for up to 2 days; reheat before serving.
