Ingredients
Scale
- 6 large eggs
- 3 tbsp mayonnaise
- 1 tsp soy sauce (low-sodium or gluten-free tamari)
- 1 tsp chili garlic sauce
- ½ tsp rice vinegar or apple cider vinegar
- ¼ tsp garlic powder
- ¼ tsp paprika

- Chopped green onions or sesame seeds for garnish
Instructions
- Place eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat, cover, and let sit for 10–12 minutes.
- Transfer eggs to an ice bath until cool. Peel and slice in half lengthwise, removing the yolks into a bowl.
- Mash yolks with mayonnaise, soy sauce, chili garlic sauce, vinegar, garlic powder, paprika, and salt until smooth and creamy. Adjust seasoning and spice to taste.
- Spoon or pipe the filling back into the egg whites.
- Garnish with chopped green onions, sesame seeds, or a small drizzle of chili garlic sauce for extra heat.
Notes
- For a gluten-free option, use gluten-free tamari instead of soy sauce.
- Adjust the amount of chili garlic sauce to control heat level.
- Chill the filled eggs briefly before serving for easier piping and cooler filling.
