- Pulled chicken from a rotisserie chicken (skin removed)
- 1 stick (½ cup) butter, melted
- 1 cup milk
- 1 cup self-rising flour
- 2 cups chicken broth
- 1 can condensed cream of chicken soup
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C).
- Spread the pulled chicken evenly in a 9×13-inch baking dish.
- Pour melted butter over the chicken and lightly season with salt and pepper.
- In a bowl, whisk together self-rising flour and milk. Slowly pour this mixture over the chicken—do not stir.
- In the same bowl, whisk together chicken broth and cream of chicken soup. Gently pour this over the flour mixture—again, do not stir.
- Bake uncovered for 45 minutes. The dumplings will rise and form beautifully as the casserole bakes.
- Let rest at least 5 minutes before serving to allow the layers to set.

Notes
- Use homemade self-rising flour if needed: 1 cup flour + 1½ tsp baking powder + ¼ tsp salt.
- Add frozen peas and carrots or sautéed mushrooms for extra veggies.
