Ingredients

  • Pulled chicken from a rotisserie chicken (skin removed)
  • 1 stick (½ cup) butter, melted
  • 1 cup milk
  • 1 cup self-rising flour
  • 2 cups chicken broth
  • 1 can condensed cream of chicken soup
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spread the pulled chicken evenly in a 9×13-inch baking dish.
  3. Pour melted butter over the chicken and lightly season with salt and pepper.
  4. In a bowl, whisk together self-rising flour and milk. Slowly pour this mixture over the chicken—do not stir.
  5. In the same bowl, whisk together chicken broth and cream of chicken soup. Gently pour this over the flour mixture—again, do not stir.
  6. Bake uncovered for 45 minutes. The dumplings will rise and form beautifully as the casserole bakes.
  7. Let rest at least 5 minutes before serving to allow the layers to set.
  8. Enjoy hot, and save any leftovers—this dish is just as good the next day!

Notes

  • Use homemade self-rising flour if needed: 1 cup flour + 1½ tsp baking powder + ¼ tsp salt.
  • Add frozen peas and carrots or sautéed mushrooms for extra veggies.
  • Use cream or half-and-half instead of milk for extra richness.
  • Sprinkle cheese over the top before baking for a cheesy finish.
  • To freeze, wrap well after baking and cool completely.
