Ingredients

  • 2 tbsp olive oil
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 2 cups cooked shredded chicken
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 1 cup small pasta (such as ditalini or elbow)
  • 1 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp salt, or to taste
  • ½ tsp black pepper
  • ¼ tsp paprika
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pot over medium heat. Add the onion and sauté until soft and fragrant.
  2. Add garlic and cook for 30 seconds.
  3. Stir in the shredded chicken, chicken broth, Italian seasoning, paprika, salt, and pepper. Bring to a gentle boil.
  4. Add the pasta and cook until tender, stirring occasionally.
  5. Reduce the heat to low and pour in the heavy cream and milk.
  6. Stir in the parmesan cheese until melted and the soup becomes creamy.
  7. Simmer for 3–5 minutes, adjusting seasoning as needed.
  8. Ladle into bowls and garnish with fresh parsley.
