- 1 small onion, finely diced
- 3 garlic cloves, minced
- 2 cups cooked shredded chicken
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup milk
- 1 cup small pasta (such as ditalini or elbow)
- 1 cup grated parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp salt, or to taste
- ½ tsp black pepper
- ¼ tsp paprika
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pot over medium heat. Add the onion and sauté until soft and fragrant.
- Add garlic and cook for 30 seconds.
- Stir in the shredded chicken, chicken broth, Italian seasoning, paprika, salt, and pepper. Bring to a gentle boil.
- Add the pasta and cook until tender, stirring occasionally.
- Reduce the heat to low and pour in the heavy cream and milk.
- Stir in the parmesan cheese until melted and the soup becomes creamy.
- Simmer for 3–5 minutes, adjusting seasoning as needed.
- Ladle into bowls and garnish with fresh parsley.
Notes
- Use leftover cooked chicken for quicker prep.
- For a lighter version, substitute part of the cream with milk or use evaporated milk.
- Cook pasta until al dente to prevent mushiness in the soup.
