- 4 cups diced potatoes (Yukon gold or russet)
- 1 lb halal smoked sausage (beef or turkey), sliced
- 2 tbsp olive oil
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup mozzarella cheese
- 1/2 cup sour cream (optional for serving)
- Salt and pepper to taste
- 2 tbsp chopped parsley or green onions (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
- In a large bowl, toss diced potatoes with olive oil, ranch seasoning, salt, and pepper.
- Spread the potatoes evenly on the baking dish and bake for 25 minutes.
- Remove from the oven, add sliced smoked sausage, and toss gently.
- Return to the oven and bake for another 20 minutes until potatoes are tender and sausage is lightly caramelized.
- Sprinkle cheddar and mozzarella cheese on top and bake for 5-7 minutes until melted and bubbly.
- Garnish with parsley or green onions and serve hot with sour cream if desired.

- For crisper potatoes, roast a few extra minutes or place under broiler briefly at the end.
